Make it Yourself Monday - Frozen Chocolate Banana Bites

As a prego mama to be I've had a few stages of cravings.  At first all I wanted was citrus and savory foods with no aversions to anything.  Toward the end of my 1st trimester, I found I still had a hankering for most citrus but the savory had started to taper off and boy NO MILK for me!  In this 2nd trimester, my sweet tooth has made an appearance that isn't very like me.  I've never really craved sweets before or if I did a nice little piece of chocolate or perhaps a scoop of ice cream would satisfy me plenty... this is not so much the case anymore.  It's like the little man inside me is demanding sweets!  I know.. oh sure blame it on the baby haha but I swear it's true!  If I don't want to gain a million pounds by all my demanded yogurt, chocolate and milkshake cravings, I need to start being resourceful on something healthier but still satisfying.  I found this photo on Pinterest that lead me straight to the recipe.  I will be making these later today and will update you on what I think.  But don't they look delish!








































Ingredients...
2 large Bananas
1/4 to 1/3 cup vegan chocolate chips
1/4 to 1/3 cup natural peanut butter
Unsweetened coconut flakes

Next Steps...
Heat up the peanut butter and chocolate.
Cut up the bananas in nice size chunks.
Dip the banana chunks in the melted chocolate peanut butter yumminess then add coconut flakes on top.
Place these chunks on parchment paper either on a flat pan or in a tupperware dish.
Place in freezer for an hour.

Most Important Step...
Don't follow this step by step.
Follow your craving.
Maybe you're not a vegan and want milk chocolate.
Maybe you want to douse your little banana chunk with sweetened coconut.
A few less healthy additions can't hurt too badly, right?!

mmmm. I buy the chocolate covered bananas at trader joes sometimes, but I like the idea of these little bites better. Thanks for the idea.

I just got a great deal on a ton of bananas so I'll definitely be making these tomorrow now! =]
