My mom makes the most amazing pumpkin chocolate chip cookies! Well, everything she makes is amazing but during this time of year when we live so far apart, this is definitely one of my favorites. Not only are they delicious but they make me feel a wee bit closer to her. So the honey and I spent our Friday night making these lovelies with a bit of our own twist. We did one batch with chocolate chips and another with peanut butter and caramel chips! Mmmm... of course I had to share this recipe with you all, for they make me so happy and I had to pass on the cheer. xo
Ingredients needed:
4 cups flour
2 cups firmly packed brown sugar
2 cups of uncooked oatmeal
1 cup granulated sugar
2 teaspoons baking soda
1 egg
2 teaspoons cinnamon
1 teaspoon vanilla extract
1 teaspoon salt
1 can (16 oz) Libby’s solid pack pumpkin
1 ½ cups butter or margarine, softened
1 cup semi-sweet choc chips
Preheat oven to 350
Bake for 20-25 minutes
(of course depending on your oven)
Combine flour, oats, soda, cinnamon and salt; set aside.
Cream butter, gradually add sugars, beating until light and fluffy.
Add egg and vanilla; mix well.
Alternate additions of dry ingredients and pumpkin, mixing well after each addition.
Stir in morsels.
For each cookie, drop about ¼ cup of dough onto a lightly greased cookie sheet; spread to form cookie.
*note.... dough can be frozen in an air-tight container. when ready to bake, first thaw in refrigerator and proceed as directed.
